Taho
Warm silken tofu, chewy sago and brown-sugar arnibal in a comforting street-vendor classic.

Ingredients
Measure and prepare everything before you begin cooking.
- 600 g soft silken tofu, chilled and within its use-by date
- 150 g cooked small sago or tapioca pearls, about ¾ cup, drained
- 100 g dark brown sugar
- 150 ml water for the arnibal syrup
- 1 pandan leaf, tied in a knot, optional
- ½ tsp vanilla extract, optional alternative to pandan
- Water for the steamer, as needed
Instructions
- 1
This version begins with cooked pearls. If using dry sago or tapioca, cook it separately according to its packet until tender, drain and measure 150 g; allow additional time. Use small translucent pearls rather than assuming large boba has the same cooking time.
- 2
Combine sugar and 150 ml water in a small saucepan. Add the pandan leaf if using. Bring to a gentle boil, stirring until the sugar dissolves, then lower the heat and simmer for 5–7 minutes until lightly syrupy. It should still pour freely.
- 3
Remove the pandan leaf. If using vanilla instead, stir it in after taking the syrup off the heat. Add the cooked pearls and warm gently for 1–2 minutes; keep the syrup covered while warming the tofu.
- 4
Place the tofu in a heatproof shallow dish without breaking it up. Set the dish in a covered steamer above simmering water and steam for approximately 8–10 minutes until hot throughout. Check the tofu packet for any additional preparation instructions.

Carefully lift out the hot dish using oven gloves. With a broad spoon, scoop thin soft layers of tofu into 4–6 small glasses or bowls. Keep any liquid that has drained from the tofu out of the serving glasses if you prefer a thicker syrup.
- 6
Spoon warm arnibal and pearls over the tofu, using a modest amount first and offering extra syrup separately. Serve warm promptly. The tofu should stay soft and custardy, not be stirred into a paste.
About Taho
The call of a taho vendor is a familiar part of Philippine mornings. Soft tofu is spooned into a cup with arnibal, a brown-sugar syrup, and sago pearls. This quick home version uses packaged silken tofu and cooked pearls rather than making tofu or cooking dry pearls from scratch.
Ingredient swaps wherever you cook
- Silken tofu: choose soft silken tofu rather than pressed firm tofu, which gives the wrong texture.
- Sago: small tapioca pearls work; cooking times depend on the packet.
- Pandan: use vanilla as an optional alternative, or keep the syrup plain.
How to know it is ready
- Syrup should flow easily rather than resemble caramel candy.
- Tofu should be hot throughout but stay soft and custardy.
- Pearls should be tender with a gentle chew; prepare dry pearls fully before assembly.
Common mistakes and fixes
- Rubbery tofu: use silken tofu and warm gently.
- Hard pearls: cook dry pearls according to their packet rather than relying on the quick recipe time.
- Too sweet: use less syrup in each cup and offer more separately.
Family and regional variations
- Serve chilled after cooling the components promptly and refrigerating them.
- Add a small amount of freshly prepared fruit topping for a modern variation.
- Use plain brown-sugar syrup without pandan or vanilla.
Storage and reheating
Refrigerate within 2 hours. Keep tofu, syrup and pearls separately and use assembled leftovers within 2 days. Pearls can harden when chilled; freshly prepared pearls give the best texture. Follow the tofu label if it specifies a shorter period.
What to serve with it
Serve warm in small cups or bowls for breakfast or merienda. Spoon on syrup gradually so diners can choose their preferred sweetness.
Taho FAQs
Does the 30-minute time include cooking dry pearls?
No. It begins with cooked pearls. Dry sago or tapioca needs additional time according to its packet.
Can I use firm tofu?
It can be eaten with syrup, but it will not reproduce the soft custardy texture of taho.
