Homemade Filipino Halo-Halo

Ingredients

Measure and prepare everything before you begin cooking.

  • 4 cups shaved ice
  • evaporated milk
  • sweetened beans
  • nata de coco
  • jackfruit
  • ube halaya
  • ice cream

Instructions

  1. 1

Measure every ingredient before starting. Prepare the tin, steamer or serving glasses and bring chilled ingredients to the temperature specified in the next step.

  2. 2

Drain all bottled fruits, beans and jellies well. Divide them evenly among chilled tall glasses, placing heavier ingredients at the bottom.

  3. 3

Shave the ice finely just before serving. Pack it gently over the fillings, then pour ¼–⅓ cup evaporated milk around the ice in each glass.

  4. 4

Check the texture before removing from the heat: baked or steamed desserts should be just set, while jams and caramel mixtures should coat the spoon without tasting burnt.

  5. 5

Top with ube halaya and ice cream. Serve immediately with a long spoon and mix thoroughly before eating.

  6. 6

Allow the dessert to cool as directed before slicing or serving. Add toppings only after cooling unless the method says to brown them in the oven.
