Bibingka

Soft coconut rice cake baked in banana leaves.

Homemade Filipino Bibingka

Ingredients

Measure and prepare everything before you begin cooking.

  • 2 cups rice flour
  • 1 cup coconut milk
  • 3 eggs
  • ¾ cup sugar
  • banana leaves
  • salted egg and cheese

Instructions

    Measure every ingredient before starting. Prepare the tin, steamer or serving glasses and bring chilled ingredients to the temperature specified in the next step.

    Line tins with softened banana leaves.

    Whisk the rice flour, sugar and a small pinch of salt, then add coconut milk and beaten eggs. Mix only until smooth and pour into the lined tins.

    Check the texture before removing from the heat: baked or steamed desserts should be just set, while jams and caramel mixtures should coat the spoon without tasting burnt.

    Bake at 190°C for 20 minutes, add salted egg and cheese, then bake 10–15 minutes more until set and lightly browned.

    Allow the dessert to cool as directed before slicing or serving. Add toppings only after cooling unless the method says to brown them in the oven.
